White Chocolate, Mascarpone and Pistachio Cheesecake

Ingredients

  • 100 grams white chocolate
  • 200 grams digestive biscuits, crushed
  • 500 grams mascarpone
  • 200 grams full-fat yogurt
  • 3 eggs
  • 50 grams shelled U.S. pistachios, roughly chopped
  • 100 grams caster (superfine) sugar
  • butter, to grease the pan
  • 1 lemon, zested, ½ juiced
  • 1 tsp (about 4 grams) vanilla sugar
  • 1 tbsp (about 15-17 grams) icing sugar (confectioner’s) (optional)
  • mixed berries, to serve (optional)

Cooking steps

Step 1

Butter the base and sides of a 20 cm deep springform cake pan before lining the bottom with parchment paper. In a large, heatproof dish placed over a pan of barely simmering water, melt the white chocolate (make sure the bottom of the bowl doesn't touch the water). Alternately, microwave the chocolate in brief bursts to melt it.

Step 2

Add the biscuits and a dash of salt when the chocolate has completely smoothed out. To ensure an equal foundation, press firmly into the tin's base all the way to the edges. Place in the refrigerator for at least 20 minutes to cool.

Step 3

Heat the oven to 140°C. With an electric whisk, mix the mascarpone, yogurt, eggs, caster sugar, lemon zest, lemon juice, and vanilla sugar. Once combined, pour the mixture over the biscuit base. Place the tin on a baking sheet and bake for 45 minutes, or until nearly set with a tiny wobble in the center. With the cheesecake still inside, turn off the oven and leave the door slightly ajar. Let the cheesecake cool completely.

Step 4

After the cheesecake has completely cooled and set, carefully remove it from the tin by loosening the sides and base with a knife. Place the berries on the top and serve with the pistachios and icing sugar. This dish is not only incredibly simple to make, but also healthy.
