Steak New York With Grilled Vegetables and Cilantro Pesto

 

Today we are cooking steak New York with grilled vegetables and cilantro pesto. We use an American beef New York steak for this recipe. The success of a high-quality U.S. Beef lies in the carefully controlled feeding regime developed by America’s beef farmers. This selected diet, which includes corn and other grains, and hay and lucerne, helps produce America’s beef which is famous worldwide for its taste and tenderness. We will cook the steak to the most popular and preferred medium rare roast – it takes no more than 5 minutes on each side, and the crust is thick and pleasing. This roast is characterized primarily by the internal temperature of the steak, which will be 55-57 degrees Celsius, as well as determining the color of the cut and juiciness.

Ingredients

  • New York Steak 1 pc
  • Zucchini 1 pc
  • Bell pepper yellow one pc
  • Eggplant in tiny size 1 pc
  • Cherry tomatoes 1 sprig
  • Cilantro 90 g
  • Red bell pepper 20 g
  • Garlic 2 g
  • Cashew nut 5g
  • Parmesan 5g
  • Chili pepper 2 g
  • Salt 2 g
  • Olive oil 50 g

Cooking steps

Step 1

Prepare the pesto sauce. Put cilantro, garlic, cashew nuts, grated parmesan, olive oil, chili pepper, and salt to taste in a mortar. Grind the contents of the mortar to a pulp. The pesto is ready.

Step 2

The next stage is to warm up the grill, and while it is gaining the right temperature for cooking grilled vegetables (150°-180 ° C), cut vegetables: zucchini, bell peppers, and eggplant. Place sliced vegetables and cherry tomatoes on a board. Drizzle the vegetables with olive oil.

Step 3

Place the vegetables on the grill (t - 180°C), and grill both sides until al-dente. Remove the vegetables from the grill.

Step 4

Now let's cook the steak. Prepare the grill grate, clean it from the rest of the vegetables, and spray it with oil. Season the steak with a bit of salt and oil. Put it on heated up to 220°С on the grill. Make the favorite grill on the meat. Using a thermometer, check the temperature inside the steak; it has to be around 55-57 °C.

Step 5

An integral part of any dish is a beautiful serving: slice the steak, lay out the grilled vegetables, add pesto, and salt/pepper.
