Carrot and Pecan Muffins

Sweet and nutritious, pecans have long occupied a special place in the hearts of sweets lovers. Ingredients

  • 2 x 400 gram cans cannellini beans in water, drained
  • 100 grams (about 6-7 tbsp) porridge oats
  • 100 grams (about 6-7 tbsp) raisins
  • 170 grams (or one large) carrot, coarsely grated
  • 80 grams US pecan halves, 12 reserved, the rest roughly chopped
  • 4 eggs
  • 2 tsp (about 11 grams) baking powder
  • 2 tsp (about 11 grams) ground cinnamon
  • 2 tbsp (about 34 grams) rapeseed oil
  • 4 tbsp (about 75 grams) acacia honey
  • 2 tsp (about 8 grams) vanilla sugar
  • Zest of 1 large orange

Cooking steps

Step 1

Preheat the oven to 180°C. Put the beans in a bowl with the eggs, oil, honey, vanilla sugar, and orange zest. Gently whisk in the cinnamon and oats. To make the mixture as smooth as possible, mix everything with a hand mixer at high speed. Use paper liners to line a 12-hole muffin pan.

Step 2

Mix the carrot, raisins, chopped pecans, and baking powder together well. Use a big ice cream scoop, if you have one, to portion the dough into the muffin tins for perfectly even muffins.

Step 3

Top each muffin with a reserved pecan. Bake for 20 minutes, or until the edges are crisp and light brown. Let cool on a wire rack. You can serve them immediately or keep them for a few days in the refrigerator or six weeks in the freezer. If keeping muffins in the freezer, defrost at room temperature. This easy muffin has everything needed to be to your taste! Here is a suggestion: try adding American cranberries (you can read more about them here).
