Shrimp Risotto With Asparagus

To cook an outstanding risotto, you need:

Ingredients

  • 500g or 6-7 large Alaskan shrimp, peeled and deveined
  • 130g Arborio rice
  • 450g or 12-15 large stems of asparagus
  • 0.7l chicken broth or water (more if needed)
  • 60 ml white California wine
  • 2 shallots, chopped
  • 1 red onion, sliced
  • 100g chives, chopped
  • 30g Parmesan cheese, grated
  • 60g heavy cream
  • 2 tbsp extra virgin olive oil
  • 5 saffron strands
  • sea salt
  • ground black pepper

Cooking steps

Step 1

Steam the asparagus for 4-5 minutes, then rinse under cold water. Drain the water and slice the vegetables into tiny pieces.

Step 2

In a skillet, heat the oil and gently sauté the shallots until they are softened but still not golden brown. Cook for 2 minutes, stirring regularly, after add rice, saffron and some white wine.

Step 3

One ladle at a time, add the chicken stock (or water) to the rice, stirring constantly until it is absorbed completely before adding the next. Once all the liquid has been absorbed, after 10 to 12 minutes, set everything aside.

Step 4

Stir in the grated Parmesan cheese (save some to garnish), cream, and asparagus until well combined. Salt and pepper to taste.

Step 5

In a large pan, heat 2 tbsp of olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for 3 minutes, or until opaque in the center. Then add the shrimp to the risotto. Sprinkle with the remaining Parmesan, thinly sliced red onion, and chopped chives to serve. This meal will be a brilliant contribution to your lunch or supper menu. The risotto will not only be flavorful, but also truly healthy! To bring out the full flavor of the shrimp, serve it with a glass of white California wine. Bon Appetit!
