Chocolate Pecan Pie with Bourbon

Pecan pie is inextricably associated with the festive period, especially Thanksgiving. But be sure, this pie will brighten any time of the year. It can become a perfect addition to your morning coffee or be shared with loved ones, completing a cozy family dinner.

Ingredients

  • 1 ¼ cups plain flour
  • 2 teaspoons sugar
  • ¼ teaspoon salt (for crust)
  • 100 gram cold butter
  • ¼ cup ice water
  • 200 grams U.S. pecans
  • 3 large eggs
  • ¾ cup brown sugar
  • ⅔ cup light corn syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 3 tablespoons U.S. bourbon
  • ½ teaspoon salt (for filling)
  • ¾ cup dark chocolate chips

Cooking steps

Step 1

Mix the flour with the sugar and salt in a food processor. Add butter and pulse until combined. Transfer to a bowl and stir in the ice water. Knead the dough a little on a floured surface and form a flattened ball. Wrap in plastic and leave in the refrigerator for at least 30 minutes.

Step 2

On a lightly floured surface, roll out the dough to a 30-cm round. Fit the dough into a 23 cm pie plate. Form 1.5 cm sides and fold the edges under itself and crimp decoratively. Refrigerate until firm.

Step 3

Preheat the oven to 190° C. Roast the pecans on a baking sheet for about 8 minutes; then coarsely chop the nuts. In a separate bowl, whip the eggs with the brown sugar. Add corn syrup, vanilla, melted butter, bourbon, and salt and mix all the contents together. Stir in the pecans and chocolate.

Step 4

Pour the filling into the pie shell. Bake in the oven for about 55 minutes, or until the center of the pie is set. If the edge is browning too quickly, cover the crust with foil. Take the pie out of the oven and let it cool a bit before serving. And now you are all set to embark on this wonderful gastronomic journey! This pie tastes amazing both warm and cold. To make it even better, serve it with a scoop of your favorite vanilla ice cream.
