Roast Duck Legs With California Red Wine Sause

Duck and wine are a perfect, time-proven combination that will never let you down. If you have never tried to cook it yourself, well, you are about to be pleasantly surprised as it is way easier than it seems. Tender duck meat roasted in California red wine sauce sounds like something that has every chance to become the star of your next family dinner.

Ingredients

  • ● 4 duck legs
  • ● ½ bottle of California red wine (Pinot Noir would fit perfectly)
  • ● ½ tablespoon five spice powder
  • ● bunch of rosemary sprigs
  • ● 4 big garlic cloves
  • ● 2 tablespoon redcurrant or quince jelly

Cooking steps

Step 1

Preheat the oven to 190°С. Evenly distribute the rosemary sprigs and garlic cloves in a roasting pan and put the duck legs atop the bed. Sprinkle them with salt and five-spice powder. Leave it to roast in the oven for 1 hour.

Step 2

Meanwhile, bring the wine and jelly to a gentle simmer, stirring to dissolve the jelly, then continue to simmer for 5 more minutes.

Step 3

After an hour, remove the duck from the oven and spoon off almost all the fat. Then pour the wine mixture around the duck legs and return the pan to the oven for 10-15 minutes to finish cooking and let the wine sauce do its job.
