Fettuccine with Salmon and Red Caviar

Ingredients

  • 250 grams fettuccine
  • 2 tablespoons butter
  • 1 shallot, minced
  • 1/4 cup plus 2 tablespoons sour cream
  • 1 tablespoon chopped parsley
  • 1 teaspoon chopped tarragon
  • 60 grams thinly sliced Alaskan smoked salmon
  • 100 grams Alaskan salmon caviar
  • Salt, pepper

Cooking steps

Boil water in a large pot, generously salted. Add the fettuccine and cook until al dente. Drain the pasta, leaving about 1/2 cup of the cooking water.

Now let us prepare the sauce. In a large, deep pan, melt the butter over medium heat. Add the minced shallot and cook over low heat for 2 minutes, stirring. Add the sour cream, parsley and tarragon. Stir in about 1/4 cup of the reserved pasta cooking water. Season with pepper to taste.

Add the pasta and smoked salmon pieces to the sauce and toss well. If the mixture seems too dry, add a couple more tablespoons of the reserved cooking water. Remove from the heat. Add three-fourths of the caviar and toss gently. Serve in shallow bowls, garnished with the remaining caviar. Сomplement the composition with a glass of wine. In this case, white California sauvignon blanc wine will fit perfectly and enhance the marine hints of the dish.
