Bourbon – Pecan Truffles

Bourbon is a type of whiskey traditionally produced in the USA. We have already discussed its long history and the particulars of its production in our recent article devoted to this drink. 

Today we have decided to present it in another light: chefs have long recognized bourbon as a true game-changer in their dessert recipes. Now we get a chance to experience that by preparing Bourbon-Pecan Truffles. 

Ingredients

  • 1 cup heavy cream
  • 1,5 cups semisweet chocolate chips (or 280 grams semisweet chocolate, finely chopped)
  • 2 tablespoons bourbon
  • 1 cup finely chopped U.S. pecans

Cooking steps

Step 1

Boil cream in a medium-sized pan, then remove from heat, and add chocolate and bourbon. Let stand for 3 minutes; whisk until the mixture gets smooth. Transfer it to a separate bowl, and refrigerate, uncovered, for about 2 hours until it thickens and gets firm.

Step 2

Line a baking sheet with parchment. Drop level tablespoons of chocolate mixture onto the baking sheet. Refrigerate chocolate mounds until firm for about 30 minutes - it will make it easier to shape them then into balls.

Step 3

Place chopped pecans in a shallow bowl. Roll each chocolate mound into a ball with your hands; roll balls in pecans, pressing lightly to make sure they stay on, and place on a baking sheet. Refrigerate truffles until set, for 30 minutes to 1 hour. Note that the truffles soften quickly, so keep them in the refrigerator until just before serving.

Feel free to experiment with coverings: in addition to pecans, you can, for example, use chopped pistachios, coconut flakes or cocoa powder. Enjoy these amazing truffles with tea or coffee or serve them as a dessert for any festive dinner. This quick and easy recipe can become a lifesaver for any unexpected visits or parties.
